Love this recipe. I make this often when I come home from work and have a friend coming over for dinner. I reduce the oil and don't always use cashews (not always on-hand). I think I've even used brown sugar instead of white sugar.

I actually made this unrated recipe for my daughter's bday dinner! Because of the unfamiliar smell, we were really unsure while cooking; but the finished product is amazing! We thought salty, but we used salted cashews. The saltiness is perfect though with the rice. I accidently tossed the recipe, and we spent hours trying to find it. Print this and put it in a safe place. Here it is, definitely a keeper!
