      What a GREAT dish. The only issue I ran into is after I got down to the last line of the instuctions and they said "serve", I looked around and still had the mushrooms sitting on the counter. So, I just threw them in and crossed my fingers. Everything turned out fine. YUM!!! YUM!!!
      I was intreged by the comment by camp chatsworth cook dealing with how he did the chicken. hmmmm.
      If anyone has any thoughts about the" when to add the mushrooms" issue, I would like to hear what you have to say.

      A stunningly beautiful soup. I loved the almost fruity taste and smell of this soup combined with the acceptable level of heat - I used about 2 oz. of red chili paste which was just enough to accentuate all the levels of this complex soup without overwhelming any. I was in love with this dish from the initial saute of galangal, lemongrass and keffir lime leaves. Try to get these ingredients fresh if you possibly can - it makes all the difference. I poached my chicken ahead of time which allowed me to finish the base of the soup before my guests arrived. Then I was able to enjoy a glass of wine and a marinated pineapple and shrimp appetizer with my guests before dinner. When we were ready to go I just put a small pile of shredded chicken in the center of each soup plate, ladled in the soup and finished with some chopped cilantro- what a beautiful presentation it made. Thanks for this terrific recipe.

      I went to our local Chinese grocery store in L.A., but couldn't find the kaffir lime leaves and galangal root. I substituted lime zest and ginger powder. Hopefully next time I will able to find the kaffir leaves. I really liked how easily this recipe came together using the red curry paste. My BF and I LOVED this Tom Kha Gai. I have to admit that we hadn't heard of it before, but I came across the recipe after the other chef reviewed it. I will definitely be printing this recipe and keeping it to make again. Thank you for adding a wonderful Thai dish to our menu.

      Seriously, as being Thai for 30 years, this is not considered Tom Kha to me. This is a Fusion Asian food !!!

      Tom Kha doesn't have sauteed chili paste with oil. It's basically water mixed with coconut milk and lemongrass, galangal to get all of the flavor, then added meat/vegetable, seasoned with fish sauce, lime juice sugar and fresh chile pepper and finished with lime leaves and cilantro.
