  • 4 12 ounces rice noodles
  • 1 tablespoon Thai curry paste
  • 14 ounces coconut milk
  • 1 14 cups chicken stock
  • 4 ounces baby corn
  • 4 ounces snow peas
  • 7 ounces shrimp, cooked and peeled
  • 1 red chili pepper, sliced, to serve (optional)
  • 2 scallions, finelt sliced, to serve

  • Soak the noodles in boiling water for 3-4 minutes until softened, then drain and rinse with cold water.
  • Cook the curry paste in a non-stick pan until it smells fragrant, then gradually stir in the coconut milk and stock.
  • Bring to a simmer, add the corn and snow peas and cook for 2-3 minutes, then add the shrimp and noodles to heat through.
  • Scatter with chili and scallions.

  1. This "reads" like it's gonna be great. There are a few comments I have that might make it better. First, it's somewhere between a main course and a soup (maybe a stew?) It's a little liquid. I mixed a tiny amount of cornstarch with cold water and added it to the simmering coconut milk and chicken broth because I like when the sauce sticks to the food. Next, the only real seasoning (if you don't use chili pepper) is the chili paste. Most of the other ingredients (corn, peas, shrimp, soup, milk) are unseasoned, so as the recipe is written, the outcome is a little bland. Chili paste is good stuff, and I had to double the amount. Try a little more and add more to taste. Lastly, I added some fish sauce (careful! that stuff is uber salty!) for depth and a sprinkling of hot chili powder to wake up the taste buds. I'd even try squirting some fresh lime juice over it right before serving. Ahhhhh, now we've got a winner!
