Fabulous! We loved it and my husband requested it for dinner the very nest night. Says it's the best meal I have cooked for him ever. p.s. What a great blend of flavors (although I would add more "heat" next time). I quadrupled this easily, and took it for a potluck at work. It was a hit! I liked this recipe - it was quick and easy - but it wasn't quite what I was expecting. It was yummy and definitely *was* Thai chicken so I guess I just don't know what I was expecting!! I used 1T ground ginger since I didn't have and don't care for fresh. I also put half a box of rice noodles in the bottom of the 9x13 pan before baking and added half a cup of water to the sauce mix (I will add more next time since the bottom noodles got crunchy).
