ingredients
- 1⁄4 cup sugar
- 1⁄4 cup creamy peanut butter
- 3 tablespoons soy sauce
- 3 tablespoons water
- 2 tablespoons cooking oil
- 1 teaspoon garlic, minced
directions
- In small saucepan combine all ingredients.
- Heat until sugar is dissolved, stirring frequently.

Here's what I did: Brown sugar replaced white sugar, added some rice vinegar and lime juice, 1 teaspoon fresh lemongrass puree and 1/2 teaspoon sambal oelek. Most importantly, I used coconut milk in place of all that oil! Oil is called for in this recipe and combine that with the oil from the peanuts! Too much! Cooked slowly as not to burn, took off heating element and cooled. I took 2 tablespoons of the sauce and diluted with about 1 teaspoon water to make a salad dressing. The salad was simple: baby spinach, romaine hearts, cucumbers, and fried shallots. Made for APRIL DELIGHTS and PAC 2014.
